2020 Estate Cabernet

$72.00

Overview

Handpicked from our estate hillside block planted in 1988. The prime benchland soil and aspect imparts fine-grained tannins and lasting depth of flavor. This is a memorable example of Dry Creek Cabernet. It’s versatile, varietally true, with youthful fruit and classic Cab structure people love. Picked at 24 brix and destemmed into open top tanks for temperature-controlled fermentation. Pressed to barrel and aged in 35% new French oak for 16 months.

Winemaker's Notes

The fruit quality of 2020 shows depth of flavor, plush body, balanced acidity and lower sugars brought on by warm + dry daytime conditions, and cooler temperatures at night. Now here comes the more complicated part… wildfires and Covid. Lab tests and sensory eval reveal the 2020 vintage is clean with depth of flavor and pleasant texture. 50 years of experience in winemaking helped with the 2020 vintage.
