Our Estate hillside Cab shows lively, traditional flavors, minus the blowsy – just the way we like it. Aromatics of thyme, lavender, rose petal, ginger, and sandalwood precede flavors of wild blackberry, dark plum, and black cherry. Ripe acids and long chain tannins give layered richness. An hour of aeration makes it hard to resist drinking now with a medium-rare porterhouse. Temp controlled open top fermenters on this baby, as well. Barrel aged 18 months in classy 55% new French oak (Alain Fouquet, Demptos, Taransaud, Bossuet). Please hold a few for 2025-2035.
